So when I first called my mom for the recipe she got hesitant and didn’t know what to say because when she creates this heavenly recipe, it comes naturally and automatically and she pulls a Rachael Ray with not measuring any of the ingredients….but that’s the beauty of it – and probably the secret to what makes this apple bread soooo goooood!

So after having to really think about it, she created this list of ingredients – so technically all of you can have something to follow!


– 2 cups of King Arthur’s whole wheat flour…….however recently she has altered the recipe to 1.5 cups of whole wheat flour and the remaining .5 cup being ground flaxseed

– Between .5 and .75 a cup of sugar (told you there really isn’t measuring of the ingredients!)

– 2 tsp. baking powder

– Generous amount of cinnamon and vanilla : )

– Pinch of salt

– 4 eggs

– About .5 – .75 of a cup of olive oil or canola oil

– 4 cups of apple, peeled and chopped into small/medium pieces (whatever kind you want!)

– About  a cup of raisins, or cranberries, or a mixture of both!

– About a cup of chopped walnuts


1.) Preheat oven to 350 degrees

2.) Grease your pan of choice lol……. usually my mom uses a bundt pan and it comes out amazinggggg!

3.) Mix the flour, ground flaxseed, sugar, baking powder, cinnamon, salt, and vanilla all together in a large bowl. Mix well!

4.) Then add the oil and eggs and mix very well again.

5.) Then add the apples, raisins/cranberries, and walnuts. (This is the point where the mixture is quite thick and my little, cute, petite mom calls me into the kitchen claiming I have more muscular arms than her and to finish it up and mix the final product well lolol- obviously I don’t mind as I anxiously anticipate the end result!)

6.) Transfer the mixture into the pan evenly and bake for about 30 or so minutes….according to my mom – use the fork trick – stick it in – if it comes out clean you are done, if it’s dirty…keep bakin!

7.) Let the bread cool before removing from pan

Ok here’s the thing: The bread is amazing from minute one it leaves the oven….HOWEVER…..the more it sits, the better it gets – in my opinion! I’m assuming it’s from the moisture of the apples, but it tasts amazing x 10 the next day, and the next, etc…..

Hopefully this recipe comes out as amazing for you as it always does for me! Also, the thing is this recipe is a great recipe to experiment with: add ingredients, substitute ingredients, etc… Although it may come out slightly different each time, it’s still one of my FAVORITE things ever! : )
